Sweet Potato Stew

1 large sweet potato
2 large sweet onions
2 lbs chicken breasts, skinless
2 tablespoons lavender flowers

Peel and cube the potato into approximately one inch cubes, or a little smaller. Chop the onions similarly.

Place in crock pot with chicken and fill remainder of pot with water. Add lavender.

Put on high for at least an hour, then put on medium. Will be ready in about 8 hours or so.

Serve with a loaf of a fresh, solid bread such as a multigrain or my recipe for applesauce bread. Since there are no greens, a crisp fresh salad of mixed lettuce with a light vinegarette dressing makes it a complete meal. Apple slices, briefly dipped in a 5to1 lemon juice solution so they don't turn brown makes a good side dish. For dessert we each had one large lavender chocolate truffle. 9/30/07
