Lavender Extract
1 cup vodka
1 cup lavender
Put the lavender into a container, pour the vodka over it. Seal up tight. Place in a cabinet or other dark location for a couple of weeks. You will want to strain the lavender flowers out after that. Pour the extract into a small bottle, only a few drops are needed to give a good lavender flavor to cakes, chicken or other creations. You can take the remaining lavender flowers and dry them for potpourri; they no longer will have any color or fragrance however.
