Lavender Scones
2 1/2 cups flour
1/3 cup sugar
1T baking powder
2/3 cup of milk
1/2 Cup Butter (1 stick)
2 T fresh Lavender (or dried)
1 T Ginger, powdered or crystallized

Mix all dried ingredients together. Cut butter into pieces, then put on top of dried ingredients and cut in, until pea sized. Mix in lavender and ginger. Mix in milk. Form into a ball, then flatten and cut into 8 pie shaped pieces.
Bake at 370 for 1/2 hour or so, until the edges are browned.
Variations: substitute grated Lemon peel.

Lavender Pound Cake
1 1/2 Cups of Butter, softened
8 ounces of Cream Cheese, softened
3 Cups of Sugar
6 T Lavender - fresh or dried
6 large eggs
4 T lavender extract
3 Cups of flour

Beat butter and cream cheese on medium speed until creamy. Add sugar and beat until the mixture is smooth. Add lavender flowers. Add eggs, one at a time. Add lavender extract. Gradually add in flour. Beat until well blended.
Pour batter into a greased and floured 10" tube pan, or 2 loaf pans. Bake at 300 for 1 hour and 45 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack 10 min. Remove from pan to finish cooling.
Serve dusted with Lavender Powdered Sugar, or Lemon Lavender Glaze

Lavender Sugar
Per Cup
1 Cup Granular Sugar
2 T lavender buds

Mix, put in a jar, seal. Wait 2 weeks.

Lavender Lemonade
Per Quart
1 Lemon
1 T Lavender buds, fresh or dried
Sugar to taste.about 1/8 to 1/4 Cup

Begin by putting the lavender buds in a small bowl and pouring about 1/2 cup boiling water over them. Stir buds into water so the water will make a kind of tea.
Cut the lemon in half and squeeze the juice into your pitcher. Add water and ice. If juice is not strong enough, add additional lemons or concentrated lemon juice to taste. Add sugar.
Strain lavender buds and add tea to pitcher, plus a few of the buds for color.
Serve with ice, garnished with lemon slices.

Lavender Extract
Lavender buds, in quantity
Vodka

Fill a small jar (like a jelly jar) with lavender buds. Pour in vodka to cover buds, close jar. Leave in jar about 2 days. Shake and turn over periodically. After about 2 days, strain buds out (dry separately, they retain some scent). Pour lavender extract back into jar and cap securely. Store in a cool dark place.

Lavender Powdered Sugar
Per Cup
1 Cup Powdered Sugar
2 T DRIED lavender buds

Grind the lavender buds in a very clean coffee grinder, mix with powdered sugar.

Lemon Lavender Glaze
Per Cup
1 Cup Lavender Powdered Sugar
2 T lemon peel finely ground
1/8 - 1/4 Cup Very Hot water

Mix. Should be runny, pour over cake while still warm.
